Feta Watermelon Salad


I was reluctant to add watermelon to a salad. Watermelon is one of those things that I can sit and eat all day (of course, then I'm in the bathroom all day). Watermelon doesn't need accompaniment. It's perfect all by itself. Until you improve it! Holy cow is this salad easy and delicious. For the salad: 1 cup Salad greens (Choose what you like. This salad used baby spinach and mixed greens. Arugula would also be nice.) 1 T Assorted herbs (I used thyme and basil) 1 T Peppermint 1 cup watermelon (Cut as you like it - my husband laughs at me because I just cut it up into random shapes because I can't wait to get at it. You can make watermelon balls if you want it to look professional and pretty. I've also seen it in slices.) 1/4 cup cucumber (sliced and quartered) 1/4 cup Feta cheese Arrange greens on a plate or in a bowl. Add herbs and mix. Add cucumber to the top. Add watermelon over that. Sprinkle feta cheese on top. Add dressing as noted below.

For the dressing: 1/4 cup olive oil 1/8 cup white wine vinegar (I used pinot grigio vinegar) Salt and pepper to taste 1 T honey (I used honey right from my hives but you may note be able to do that.....) Combine all ingredients and whisk until blended. Pour the dressing over the top of the salad to your liking. You probably won't need all of this dressing, but don't let me stop you. Use bread to sop up leftover dressing if you like. Or save it for salad the next day!
